Nothing signifies healthy to me more than a large glass of freshly juiced fruits and vegetables.

This very quick and simple recipe for a homemade fresh juice will make you feel refreshed, healthy and alive. Okay, so it won’t give you long lasting energy (but as this ME / CFS sufferer knows from hard worn experience anything that claims that is most probably lying…) but it will make you feel light, fresh, nourished and healthy. It is a great ‘pick me up’.

You can literally make a juice from any combination of fruit and veg. Here the main ingredient is beetroot. This just happens to be my personal favourite, possibly because it produces a juice of a vibrant pinky purple colour! The added ginger takes the edge of the beetroot’s earthiness and gives the juice an added zing.

Beetroot is a powerhouse of nutrients, a true superfood. Beetroot juice boosts stamina thanks to its high nitrate content. This is converted into nitric oxide in the body which widens blood vessels. This means blood flow is improved and thus the amount of oxygen required by your muscles is reduced. So your muscles work more efficiently which helps increase your energy and helps reduce that horrid sluggish feeling.

But if you really don’t like beetroot, just make up a different combination. Apple and carrot works a treat, as does spinach and apple. Literally take whatever fresh fruit and veg you have in your fridge and fling it in the juicer and see what you get!

I try to include a couple of glasses of  fresh juice in my diet each week, usually as part of my lunch. Don’t be deceived, it’s pretty filling, not quite a meal in itself but nearly. I usually follow it with some fresh veg sticks and homemade hummus such as Sweet Potato Hummus.

  •  1 large beetroot with stalks and leaves, quatered
  • 1 carrot, halved
  • 1 green apple, quartered
  • 1 stalk of celery, halved
  • 2 inch piece of cucumber, quartered
  • 1 inch piece of fresh ginger
  • 1 tsp spirulina powder – supergreen powder great for an alkaline boost (optional)
  1. Using a juicer slowly add each ingredient and watch as the flesh is separated and you are left with the beautiful juice.
  2. Tip: save a couple of the pieces of apple until the end and put them through after you’ve added the ginger as this helps to flush through all the little strands of ginger.
  3. Give the juice a good stir to combine all the different juices (they tend to separate).
  4. If using spirulina, add it to your juice and stir thoroughly until all the juice and powder are well mixed.
  5. Et voila! Your juice is ready!

NOTE: if you do not have a juicer, you can easily make fresh juices in a liquidizer or blender, you will just need to add some cold water to thin down the consistency of the blended vegetables and fruits to make it a juice rather than a purée.
